Apple barley porridge

Nothing beats the winter blues better than a big bowl of warm porridge.

Ingredients

  • 1 cup Against the Grain barley berries
  • 1 1/2 cups apple juice
  • 1 1/2 cups water
  • 2 apples, peeled and diced
  • 1/2 cup dried apples of other fruit
  • honey or maple syrup to taste

Cooking

Put all the ingredients into a pot and cook on medium low heat until the barley berries are cooked, but still have a bit of crunch. Alternatively, you can add all ingredients into a slow cooker and cook on high for 2 hours or low for up to 4 hours.

To serve, add your favourite toppings — dried fruit, nuts, yogurt, maple syrup or honey.

Keep a pot of this cooked porridge in the refrigerator for the week for a quick, on-the-go breakfast — just heat and serve.
